HOPE, ARKANSAS - The American Institute of Baking awards a “SUPERIOR” Rating to Southern Bakeries, LLC (Southern) after receiving an audit score of 910.

Rick Ledbetter and Mike Nelson of Southern Bakeries, LLC recently announced that Southern’s Hope production facility had received a “Superior” Rating after an AIB Audit for Muffin and Bagel production, shipping, receiving and maintenance departments. Southern would like to congratulate its hard working staff for their success in the AIB Audit. Southern would also like to recognize Pam Miller for her efforts in leading and managing the audit preparation.

The American Institute of Baking performs an annual audit that is based on their published AIB Consolidated Standards for Food Safety. The Standards for Food Safety are published for food processors’ usage, to evaluate the food safety risks and compliance levels to the criteria in the Standards. The Standards contain the criteria and rating methods used to assign numerical scores to the facility. The criteria is a combination of good management principles; The Federal Food Drug and Cosmetic Act; Good Manufacturing Practices; U.S. Military Sanitary Standards; and the Federal Insecticide, Fungicide, and Rodenticide Act. The facility being inspected is given a total score and a rating based on that score.
